Top wines from the Vipava Valley

Our goal is to make high-quality wine with a character. We produce our wines with the newest wine techniques and in that way achieve unique taste, originating from our vineyards.

Čebron Family Estate

We fill two wine lines under the trademark Čebron Family Estate.
The line of fresh wines prides itself with freshness and typical varietal wine spirit. The other line is produced with an extended maceration and refinement in oak and acacia barrels.

Vineyards

Our vineyards are nurtured and formed by the third generation of hard-working hands already. Our land pays back for our love for land and organic cultivation with exquisite wine, we love to share with friends.
All we do, we do with love for you, for us and for the estate visitors.

Wine cellar

Our wine cellar is divided into two parts: wooden barrels in the first part, where red and some of the white wines are kept and refined and stainless-steel barrels in the second part of the cellar, where fermentation and refinement of white wines proceed.
Constant temperature of the cellar is maintained between 12-14 °C.
There is also an area in the cellar, meant for the processing of the grapes and an area, where brandy and dried meat products age.

Zelen

ČEBRON LABEL WITH A GREEN LINE
Zelen represents a fresh, annual and youthful wine line. Their character is based on freshness, varietal characteristics and fruitiness. These wines keep freshness even two years after bottling but are meant to be enjoyed when new.

VINEYARD
“Dohtarca”, altitude above 85 meters. 800 vines, 2 kg of product per vine.

PRODUCTION TECHNOLOGY
Old protected vine variety from Vipava. Manually harvested grapes.
Shorter maceration of grape mash. Pressing and clarifying of grape must with nitrogen. By using this procedure, we achieve immediate protection from oxygen and the loss of fragrance. Immediate fermentation of slightly unclear must with selected yeasts on the temperature between 14 °C and 16 °C. Wine has passed partial biological deacidification. Two month-long wine ageing on lees and with stirring until the first settling of the wine into stainless-steel barrels.

COLOR, FRAGRANCE, FLAVOR
The wine is of the yellow color of wheat with shades of green.
Fragrance of ripe peaches and pears.
The flavor of this wine is light, seductive, harmonious and with pleasant fading.

FOOD RECOMMENDATIONS
Zelen makes a good combination with light cold and hot fish dishes, cold cuts, vegetable appetizers, poultry and beef.

Malvasia, Malmsey

Malvasia, also known as Malmsey, represents a fresh, annual and youthful wine line. Their character is based on freshness, varietal characteristics and fruitiness. These wines keep freshness even two years after bottling but are meant to be enjoyed when new.

VINEYARD

“Strujenca”, altitude above 85 meters. 2000 vines, 1,5 kg of product per vine.

This vineyard’s feature is that all vines are cuttings. They are more resistant to diseases, produce less yield in terms of quantity and grape matures harmonically.

PRODUCTION TECHNOLOGY
Manually harvested grapes.

COLOR, FRAGRANCE, FLAVOR
Golden-yellow color with shades of light brown.
Fragrance: cookies, fruit, pear, lemon, asparagus, acacia, linden, mango, grass, beeswax, grapes, apple, honey, caramel.
Refreshing and luxurious flavor.

FOOD RECOMMENDATIONS
Malvasia makes a good combination with fish carpaccio, seafood risotto, blue and whitefish.

Sauvignon

Sauvignon represents a fresh, annual and youthful wine line. Their character is based on freshness, varietal characteristics and fruitiness. These wines keep freshness even two years after bottling but are meant to be enjoyed when new.

VINEYARD
“Škrebetelj”, “Potočna”, altitude above 120 meters. 2500 vines, 1,5 kg of product per vine.

PRODUCTION TECHNOLOGY
Manually harvested grapes.

COLOR, FRAGRANCE, FLAVOR
Light yellow wine with distinctively elegant wine spirit, which resembles grapefruit, clove, grass, sweat, toast, paprika, pepper, white flowers, apricot.
Higher essence gives fullness, harmony, seductiveness, elegance and trust.

FOOD RECOMMENDATIONS
Sauvignon can be enjoyed as an aperitif or with light food like seafood, fish, white meat and, especially, asparagus dishes.

Rosé

Rosé represents a fresh, annual and youthful wine line. Their character is based on freshness, varietal characteristics and fruitiness. These wines keep freshness even two years after bottling but are meant to be enjoyed when new.

VINEYARDA
“Logi”, altitude above 100 meters. 1200 vines, 1,5 kg of product per vine. 35 years old vineyard.

Two month-long wine ageing on lees and with stirring until the first settling of the wine into stainless-steel barrels.

VONJ / OKUS
Iskriva čebulna rdeča barva z roza odtenkom. Sortne zaznave Merlota s poudarkom maline, jagod, breskev in drobnega rdečega sadja. Aroma je obstojna in čez čas pokaže svojo kompleksnost.

COLOR, FRAGRANCE, FLAVOR
Sparkling onion-red color with shade of pink.
Durable fragrance, which shows its complexity over time.
Merlot variety perception with a distinction of raspberry, strawberry, peach and fine red fruit.

Chardonnay

VVINEYARD
“Hrib”, “Zgoni”, altitude of 130 meters. 2000 vines, 1,5 kg of product per vine.
The best position.

PRODUCTION TECHNOLOGY
Manually harvested grapes.
Shorter maceration of grape mash, pressing and clarifying of grape must with sedimentation. Fermentation of slightly unclear must in stainless-steel barrels on 15 °C. Wine passed into partial biological deacidification.

FRAGRANCE, FLAVOR
Honey pear, ripe apples, later a note of dried fruit.
Minerality and a long, rich aftertaste can be felt.

FOOD RECOMMENDATIONS
Chardonnay makes a good combination with prosciutto, pasta, risotto, gnocchi, white meat, mollusk.

Yellow Muscat, Moscato Giallo

Yellow Muscat, also known as Moscato Giallo, is a character in our cellar, which is why we decided to give it a golden line. It is the only dry wine and most often on the table for various celebrations.

Sparkling yellow color with shades of green.
Intensively expressed varieties of muscat, lychee and jasmin fragrances.
Good harmony of sugar and structure.

FOOD RECOMMENDATIONS
Can be enjoyed as an aperitif but makes especially good combination with desserts and cakes that are not too sweet.

Refosco

ČEBRON LABEL WITH A GOLDEN LINE
Refosco represents more matured wines, refined in oak barrels. These wines are produced from grapes with extended maturing in the vineyards. They are suitable for drinking after bottling, but we also recommend aging them for the next couple of years. This is the reason we added them the inscription “Selection”.

VINEYARD
“Vidmaršče”, altitude of 85 meters. 1200 vines, 2 kg of product per vine.
A feature of this vineyard is, that the vines of the “red stalk” come from the largest European nursery, Rauscedo, Italy. This refosco clone’s characteristic is extraordinarily high grape maturity and contained acidity, which pass into full biological deacidification during fermentation.
It is our honor to be one of the few, if not the only ones, in the Vipava valley, who produce and bottle this variety of refosco.

PRODUCTION TECHNOLOGY
Manually harvested grapes.
Several-days warm maceration at 20 °C with added selected yeasts. After pressing, further alcoholic fermentation at controlled temperature of 18 °C. Wine passed into full biological deacidification and aged for a year in used barrels, made of American and French wood.

FRAGRANCE, FLAVOR
Forest fruit, intertwined with a note of wood, which does not overlap fruitiness.
Light, tannic, full and extract wine.

FOOD RECOMMENDATIONS
Refosco pairs well with pâtés, game and meat, grilled on charcoal grills.

Cabernet Savignon

Cabernet Sauvignon represents more matured wines, refined in oak barrels. These wines are produced from grapes with extended maturing in the vineyards. They are suitable for drinking after bottling, but we also recommend aging them for the next couple of years. This is the reason we added them the inscription “Selection”.

VINEYARD
“Potočna”, “Brajda”, “Škrebetelj”, altitude from 100 to 130 meters. 3000 vines, 1,5 kg of product per vine.

FRAGRANCE, FLAVOR
Peculiar wine spirit gives a fragrance of forest fruit and soft fruit because of cold maceration.
Warm maceration gives tobacco and dry prunes flavor. The flavor becomes rich and seductive.

FOOD RECOMMENDATIONS
Cabernet Sauvignon pairs well with salami, matured cheese, beef, game.
